- 2 Tbsp. olive oil
- 3 lbs. chicken parts, cut into serving pieces
- 1 large onion, cut into wedges
- 1 large red or green bell pepper, cut into wedges
- 1 can whole peeled tomatoes in puree, undrained
- 1/2 tsp. garlic powder
- 1/2 tsp. dried oregano leaves
- 1/4 tsp. salt
- 1 package Knorr® Rice Sides™ - Herb & Butter
- Heat oil in large skillet over medium-high heat and brown chicken. Stir in remaining ingredients except Knorr® Rice Sides™ - Herb & Butter and simmer covered until chicken is thoroughly cooked, about 30 minutes.
- Toss together with hot Rice Sides and serve.
- FINISHING TOUCHES: Serve with a green salad with olives and cheese, crusty Italian bread and pound cake drizzled with fruit preserves or chocolate syrup for dessert.
