Roasted Tomato Salsa

- 1 1/2 lbs. ripe tomatoes, roasted and coarsely chopped*
- 1 onion, roasted and chopped*
- 2 jalapeno peppers, roasted, seeded and finely chopped*
- 3 cloves garlic, finely chopped
- 2 Tbsp. lime juice
- 2 Knorr® Cilantro MiniCube(s)
- Combine all ingredients in a large bowl. Chill until ready to serve. Serve with tortilla chips or as a topping for grilled meat, chicken or fish.
- * To roast vegetables, grill or broil in a broiler pan lined with aluminum foil, about 10 minutes or until blackened on all sides, turning occasionally. Wrap in foil and let cool.
